The oil is made from a blend of Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, and Dahbia cultivars, grown at an altitude of 390 meters.

Naturally rich in polyphenols, particularly hydroxytyrosol, the oil is the result of the olive trees' "panic" response to the harsh desert environment, with its extreme temperatures, rocky soil, and limited water availability. This stress causes the trees to produce a high quantity of antioxidants, resulting in an extraordinary hydroxytyrosol content.
