Naturally rich in polyphenols, particularly hydroxytyrosol, Atlas Olive Oils' organic extra virgin olive oil (EVOO) is the result of the harsh desert environment (127°F during summer, rocky soil, limited water) that causes the olive trees to produce a high quantity of antioxidants to survive.
Atlas Olive Oils has carefully approached all aspects of its organic olive oil production process by adopting sustainable procedures only. From the careful selection of cultivars grown in an unspoiled environment to the mechanized processes and first cold pressing, every step is designed to ensure the production of premium organic EVOO.
The company's olive groves, located in the Marrakech region, comprise both old bicentenary orchards and modern high-density plantations. The diverse cultivars, including Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, Dahbia, Arbequina, and Arbossana, contribute to the complex and delicate aroma and taste profiles of the oils.
With a production area of 245 hectares (605 acres) at an altitude of 390 meters above sea level, Atlas Olive Oils' orchards feature well-balanced soil composition (30% clay, 35% muddy/loamy, 35% sandy, pH 8.34). The pruning methods, including cutting the trees into cups and hedges, optimize the growing conditions and yield.
The company's organic EVOO production ranges from 25,000 liters (old bicentenary orchard) to 450,000 liters (modern orchard), with a maximum acidity of 0.4° and 0.2°, respectively, when bottled. Harvested between the end of September and the end of December, the olives are cold-pressed at a maximum temperature of 26°C using a 2-phase continuous system, resulting in a yield between 11.5% and 15%.
Atlas Olive Oils' organic EVOO products, including Atlas, Les Terroirs de Marrakech, Desert Miracle, and Atlas Natural Spray, offer a diverse range of aromas and flavors, from ripe banana and red tomato to almonds, basil, and culinary herbs.
