Naturally rich in polyphenols, particularly hydroxytyrosol, the company's organic extra virgin olive oil (EVOO) is the result of the harsh environment of the Moroccan desert, where the olive trees are so stressed that a "panic" (survival instinct) causes them to produce a large quantity of antioxidants to survive. This process results in an extraordinary hydroxytyrosol value in the final olive oil.

Atlas Olive Oils has carefully approached all aspects of its organic olive oil production process by adopting sustainable procedures only. The company's "Desert Miracle" organic EVOO is made from Dahbia (a Moroccan variety) and Arbequina (a Spanish variety) cultivars, grown in the ElBorouj region at an altitude of 340 meters above sea level. The soil in this area is a mix of 25% clay, 30% muddy/loamy, and 45% sandy, with a pH of 8.20.

The olive trees are pruned into cups or hedges, with a density of 1,852 trees per hectare. The company produces 330,000 liters of EVOO with a maximum acidity of 0.2% when bottled, harvested from late September to late December and extracted using a two-phase continuous system with a maximum temperature of 26°C.
